I made this once during the covid lockdown and the recipe worked great for me. (Who didn’t bake during the lockdown? 😂)
You can make a batch of it and wrap the remaining individually to freeze or gift them to people :) They look so aesthetic!
It’s a small investment into the tray and ingredients but if you bake often then I’d say it’s worth it!
Traditionally, Canelé’s are made using individual copper moulds and beeswax which is very costly. But this tray works well enough itself! The Canelés come out with a nice crusty exterior and custardy filling. 💛
What I like about this recipe is that it’s so easy, straightforward and because you actually need to let the batter sit for 48 hrs in the fridge before baking, it makes the whole process feel somewhat easier.

500g full fat milk
35g unsalted butter
240g white sugar
75g ap flour
50g bread flour
30g whole egg
50g egg yolks
5g vanilla bean paste (substitute with 2 tsp vanilla extract)
20g rum
