Freezing Eggs❄️🍳

Our ladies are laying like crazy (good problem to have. No complaints) We use a lot of eggs, I’ve sold some to neighbors, given some away to friends and family, and now my energy is being used to explore preservation methods for this beautiful bounty.

There is water glassing, freezing, freeze drying, dehydrating, salted yolks and preserving in lard. I’m sure there are many other methods but those are off the top of my head.

First up; freezing eggs.

I read a bunch of blogs and watched a bunch of YouTube videos and there are many methods people use to freeze eggs. Some freeze them whole, some in the shell, scrambled up (which is what I did this round), some separate yolks and whites, some add salt/sugar.

I froze several batches in my souper cubes molds after whipping them together.

I’m gonna give them a go next week in a few different ways (Scrambled, Dutch baby, breakfast casserole) just to see how they fared the freezing process.

I’ll keep you posted how it turns out.

Side note: you don’t have to have fresh eggs to preserve eggs. If you find grocery store eggs on sale you can stock up and preserve them. Food security is never a bad practice to prioritize.
