easy-to-make meals for 2 🏡

Happy Monday!

Moving out of parents’ house after getting married naturally means lesser home-cooked food. I mean after an hour of commute from work I just can’t bring myself to cook dinner 🌝 but eating outside food (mcd???) gets boring and sometimes it isn’t very nice so even though I’m not the best at cooking (+ I don’t like to touch raw meat 🥲) I try to prepare some (easy) meals at home for my husband and I at least once a week!!

Here are some of my favourites :)

🍛 japanese curry rice🥕

I followed the recipe from justonecookbook (google it). The secret ingredients I usually add are ketchup, coffee granules, honey, abalone/oyster sauce, garlic, soy sauce. Jap curry rice is perfect for me cos I buy frozen chicken/pork katsu from fairprice / don don donki and just put it into the airfryer - no need to touch raw meat :)

🥓 rolled shabu pork and enoki 🍚

This is slightly more effortful and time-consuming due to the need to roll each pork belly slice with enoki mushrooms. Even more so for me because rmb how I dont like to touch raw meat? I use chopsticks / plastic gloves 😝

🍅 baked salmon & tamagoyaki 🐟

I try to avoid touching raw meat but I love salmon so this is one exception I’d make. Plus idk why salmon outside is often over-cooked :( sometimes I air-fry / bake potatoes instead of having it with rice. I also add-on another side dish like tamagoyaki shown here.

🥐 scrambled eggs ham croissant 🍳

no recipe reference here cos I just buy croissants from BreadTalk and if you can get it - blackforest ham!!! It’s my husband’s favourite and I enjoy making this for him.
