Summer Recipe # 8: Shrimp Tacos with Bacon Cabbage Slaw 🦐🥓🌮

Sweet shrimp tacos with a lemon sauce, bacon cabbage slaw, and avocado. Fresh and so delicious! These tacos are the perfect addition to your summer weeknight dinner routine. Make sure to give them a try!

Servings: 5

- 1 pound of shrimp, season to your liking (I did salt, pepper, paprika, cumin powder, and chili powder).

- 10 corn tortillas (I used two per taco)

- Avocado slices

- Cilantro, chopped.

- Extra lime wedges

Lemon Sauce:

- Yogurt (regular or Greek is fine)

- Few garlic cloves, chopped.

- Lemon juice

- Salt & pepper to taste.

Bacon Cabbage Slaw:

- 1/4 medium green cabbage, chopped.

- 2 cups cilantro, chopped.

- Few bacon slices, diced.

- Lemon juice to taste.

- Salt and pepper to taste.

Directions:

1. Start by seasoning the shrimp and set aside to marinate for 15 to 20 minutes.

2. Make the lemon sauce by combining yogurt, garlic, lemon juice, salt and pepper to taste. Refrigerate for at least one hour before use.

3. Crisp up the slices of bacon. Place on a paper towel, let it dry, and chop into bite size pieces.

4. To a bowl, add the bacon pieces, cabbage, cilantro, lemon juice, salt, and pepper to taste. Set aside.

5. Cook the shrimp in a hot pan, do not over cook. Next, warm the tortillas either on the stove or microwave.

6. Assemble each taco (I did 2 tortillas each) with plenty of sauce, bacon cabbage slaw, shrimp, avocado slices, and chopped cilantro. Serve immediately, enjoy!
