Spiced chicken in a delicious creamy, rich tomato sauce. This is a simpler version of my mom’s recipe with my own spin and it is SO good!

- 1 1/2 pounds boneless & skinless chicken thighs, cut into chunks

- 1/2 medium sweet onion, diced

- 3 tablespoons tomato paste

- 3 cloves garlic, minced

- 1 medium green chili, slit in half or chopped

- 1 tablespoon freshly grated ginger

- 1 1/2 teaspoons garam masala

- 1 1/2 teaspoons kashmiri chili powder

- 1 1/2 teaspoons coriander powder

- 1 1/2 teaspoons ground turmeric

- 1 (15-ounce) can tomato sauce

- 1 cup chicken stock

- Salt and pepper to taste

- 1/2 cup heavy cream

- Squeeze of lemon juice

- Fresh cilantro, chopped

Directions:

1. Heat oil in a deep pot over medium heat. Season the chicken with salt and pepper. Add this with the onion and cook for 4 to 5 minutes. Let the chicken get golden.

2. Add tomato paste, garlic, green chili, ginger, and the spices. Cook until fragrant, about 3 minutes.

3. Next, add the tomato sauce and chicken stock, season with salt and pepper to taste. Bring to a boil, reduce the heat, and simmer for about 10 to 15 minutes or until it has thickened.

4. Stir in the heavy cream. Cook for another few minutes or so. Finish with a squeeze of lemon juice and chopped cilantro.

5. Serve immediately with white rice or naan. Enjoy!
