Zuppa Toscana✨
1/2 pound Italian sausage (spicy or mild)
1/2 yellow onion (diced)
2 TBSP butter
1 TBSP minced garlic
2-3 medium Yukon gold potatoes
1 cup water
3 cups chicken bone broth
2 cups chopped kale
1 cup heavy cream
Salt and pepper to taste
-Start by browning the sausage in a large pot, then setting aside for later.
-In the same pot, add butter and onions and cook until onions are translucent. Add garlic, and cook until fragrant
-add chopped potatoes, salt and pepper, water and broth. Boil until potatoes are tender
-add cream and kale. Simmer at-least five more minutes
I love to serve it with warm sourdough bread, grated Parmesan and red pepper flakes as a garnish.

This I guess is technically inspired by the Olive Garden soup- but I’ve never had it so I can’t tell you how accurate it is lol. Regardless this is currently one of my favorite weeknight meals that is incredibly comforting and delicious!
