Ingredients:
Eggs
Sausage patties ( I used chicken sausage )
English muffins
American or Cheddar Sliced cheese ( I didn’t have slice, so I used shredded mozzarella)
Directions:
Step 1: Preheat your oven on 375. Oil your muffin pan with oil or butter and crack your eggs into the molds. (I added salt & pepper.) Bake in the oven for about 20 minutes or until they look done.
Step 2: Then butter your English muffins and place on a separate pan to toast in the oven for about 5 minutes. (This is optional)
Step 3: In the meantime cook your sausage patties. I cooked mine in the air fryer for about 10 minutes.
Step 4: Assemble your muffins. Place one sausage patty over the muffin bottom. Top with a slice of cheese and 1 egg round, and then cover with another muffin top to create a sandwich.
Step 5: Wrap tightly in plastic wrap and place in the freezer. You can store these in the freezer for up to 2 months.
📒Notes: To reheat, remove plastic wrap from the frozen sandwich and wrap in a paper towel. Place in the microwave for about a 1 minute & 30 seconds, or until heated through completely.
📒Another note: When reheating these I notice the egg rounds take longer to heat up compared to the sausage patty and muffin. I sometimes have to separate the egg from the sandwich and reheat separately.
