Easy breakfast muffins!

Our mornings are usually busy so I try to find something quick for breakfast 🥞 my breakfast muffins are super easy and will freeze for 2-3 months (if they last that long 😜)

Ingredients:

2 cups pancake mix

Eggs

Sausage

Shredded cheese

Directions:

Mix pancake mix according to package, pour into a greased muffin pan to barely cover the bottom (approx 1 tsp). Bake at 350°F for 3 minutes, remove from oven.

Cook sausage and eggs thoroughly, add to muffin tin on top of pancake batter. Top with shredded cheese and remaining pancake batter, bake for an additional 10 minutes.
