✨ Easy Chilaquiles Recipe ✨

My favorite weekend treat! Chilaquiles just like my mom showed me how to make growing up. Chilaquiles can be made with or without egg but I prefer them this way.

What you’ll need:

- 15 to 20 white corn tortillas (cut in triangles)

- Vegetable oil

- 5-6 large eggs (whisked)

- Hot tomato sauce (canned)

- Half a yellow onion (diced)

- Half a large bell pepper (diced)

- Half a large jalapeño (diced)

- 1 roma tomato (diced)

- salt and pepper to taste

serve with sour cream, cotija cheese and salsa
