Ingredients

½ cup onion, chopped

1 (10 oz) package frozen chopped spinach, thawed and drained

6 eggs, beaten

3 cups low-fat shredded Muenster cheese

1/4 tsp salt

1/8 tsp ground black pepper

Non-stick pan spray

Directions

1. Preheat oven to 350 degrees. Lightly coat a 9-inch pie pan with non-stick cooking spray.

2. Heat large skillet over medium-high heat sprayed with non-stick cooking spray. Cook onions, stirring occasionally, until soft. Stir in spinach and continue cooking until excess moisture has evaporated.

3. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.

4. Bake until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

Yields 5 servings

Per serving: 1 lean | 1 green | 2 condiments
