Cold Weather Home Recipe:
Ingredients:
Splash of Olive Oil
2 medium yellow onion
1 tsp sesame oil
2 tbs minced garlic
1 carrot
1 celery stock
1/2 tbs minced ginger
4 cups chicken broth
2 cups beef broth
1 cup sliced mushrooms
1/2 cup scallions
Rice noodles
Soy sauce to taste
Salt to taste
Pepper to taste
Optional: Sriracha to taste
Detailed Steps:
Add a splash of olive oil to a pot and turn to medium heat
Sauté the onions until slightly carmelized.
Add your carrot, celery, garlic, ginger, sesame oil, and broths.
Season to taste with salt, pepper and soy sauce
Bring to the boil and then simmer for 30 minutes
On the side, make your rice noodles per the packet instructions
*don’t forget to strain and rinse with cold water once done
Strain the veggies from the broth
Add rice noodles, mushrooms and scallions to a bowl.
Ladle the soup on top and add in soy sauce, Sriracha and additional seasonings to taste
