Easy peasy, lemon squeezy! Our one-pan salmon recipe is a healthy and satisfying meal that’s perfect for busy families 😋

INGREDIENTS:
3 Ora King Salmon Junior Cut from @publicfishery
for the marinade:
2 tbsp olive oil
1 tbsp light soy sauce
2 tsp honey
1 tsp each - smoked paprika, garlic powder, onion powder, mixed herbs, parsley flakes
black pepper, to taste
1 tablespoon lemon juice
vegetables:
1 large potato, cubed
1 large sweet potato, cubed
1 large carrot, chunks
1 cup broccoli florets
for the seasonings:
2 tbsp olive oil
1 tsp each - garlic powder, onion powder, smoked paprika, mixed herbs, parsley flakes
black pepper, to taste
METHOD:
1. Preheat your oven to 200°C (400°F).
2. Toss potatoes and veggies in a bowl with olive oil and herbs.
3. Place them on a baking sheet lined with parchment paper and roast for 15-20 minutes firs, or until slightly tender.
4. Meanwhile, prepare the salmon marinade, then coat the salmon on both sides.
5. Place the salmon on top of the roasted veggies.
6. Roast for another 10-15 minutes, or until the salmon is cooked through and flaky. The veggies should be tender-crisp.
7. Squeeze lemon juice to the salmon before serving. Enjoy!
