Start air frying all your vegetables because it’s so easy + tastier + healthier Cus you don’t need a lot of seasoning at all.

Just good olive oil, and some salt and pepper.

Sometimes I don’t even add salt and pepper, and let the natural sweetness shine through. If you wanna get fancy with it you can too, add some dried herbs of choice or chilli powder for 🔥. Ground sichuan peppercorn is 👌 for mala lovers.

I like to serve this with steak / salmon / chicken BUT I can sometimes just eat these by themselves. Have also served this with rice as a side dish.

Best veggies for this:

- cruciferous, “hard” veggies such as potato, broccoli, cauliflower, asparagus, zucchini. Today I’ve got carrots, broccoli, cauliflower, pumpkin.

- some leafy veg can work too, it will crisp up and can be nice! Veggies I’ve tried: Kale, spinach, bok chok even lol. Kale damn nice, bok choy surprisingly nice but has a bit of bitterness to it. Spinach too but with spinach it will fly around your air fryer fyi.

ingredients:

- veggies of choice

- enough olive oil to coat

- pinch of salt and pepper

1. Preheat air fryer to 180degC for 5 mins.

2. Meanwhile chop veggies to similar sizes.

3. Add olive oil, salt and pepper to taste. Toss through to coat veggies evenly.

4. Dump in the air fryer. You can spread them out for a more even roast, but I usually just dump them in. Even when stacked I find it cooks well!

5. Cook at 150degC for 15 mins.

6. At the 15-min mark, take basket out and shake basket for even cook. Turn the heat up to 200degC and let it cook for 5 more mins. This is going to give a gorgeous char or crisp up the veggies

7. Done! Serve.
