The most time consuming part of this is chopping the produce, then add chickpeas and feta into the bowl and mix in the dressing. I made too much dressing this time as you can probably tell from the video but itβs ok because I ended up setting some aside later and using it in other salads.
I adjusted the recipe to prevent you from running into the same issue. It serves about 2 people for the work week. This for me is a light lunch so I just add more protein to make lunch more filling on days Iβm hungry for it. #mealprepideas #lemon8food @Lemon8 Food

1 bell pepper
1 oz chives
16 oz Persian cucumbers
12 oz sweet mini peppers
Feta 6 oz
Pepperoncinis
Olives
Chickpeas 2 cans

3 tbsps olive juice
3 tbsps pepperoncini juice
1-2 Tbsp Dijon
1/3 Cup olive oil
1/4 tsp black pepper
Juice of half a lemon
3 cloves garlic
1 tbsp Italian seasoning
