Base: quinoa salad
I’ve been meal prepping this a lot cos it’s so easy to make and super yummy! It’s high in protein, clean and refreshing!
I mix in quinoa, chickpeas, Japanese cucumber / zucchini, cherry tomatoes, feta cheese.
Sometimes I use this to mix in whatever leftover ingredients I have in the fridge as well e.g. mushrooms, corn, carrots
For the dressing / seasoning:
Extra virgin olive oil (I skip this if I wanna eat cleaner 😮), black pepper, honey mustard, apple cider vinegar / lemon.
Protein: marinated oven baked salmon
I change the seasoning up all the time but my favourite marinate are
1. soy sauce, honey and black pepper
2. miso paste, honey and black pepper
Other protein I like to add with this is:
1. Chicken breast from Cheekies
2. Air fried tau kua and tempeh
