INGREDIENTS IN BIRRIA

• Stew Meat- Tougher cuts of stew meat ( beef, lamb or goat) work well here and will tenderize in the flavorful sauce.

beef stock (or sub chicken stock)

Dried Mexican chilies- guajillo chiles, ancho chilies, or Pasilla chilies, chipotles, etc)

Fresh onion and fresh garlic

Optional diced tomatoes– canned fire-roasted or fresh.

• Mexican Spices: cumin, oregano, allspice, bay,

leaves, chile powder, apple cider vinegar,

Salt and pepper

Serve with tortillas, melty cheese, onions, cilantro and avocado and bowl of sauce on the side OFC!
