This recipe is perfect for anyone looking for quick & easy way to get your lunch/dinner fix under 35 minutes!

Prep time: 15min

Cooking time: 20min

Ingredients you need:

- Shallots/red onion

- Garlic

- Chilli padi

- Chilli flakes (optional)

- Half a lemon

- Luncheon meat

- Prego tomato sauce

- Pasta of choice

- Olive oil

- Salt & pepper

Step 1: To save time, start with boiling your pasta before you start prepping your food. Throw in your pasta, some olive oil and about 2-3 teaspoons of salt into the pan and boil at medium heat. Check the back of your pasta packaging for boiling instructions but for reference mine took 8.5 minutes for 3 servings.

Step 2: Peel and chop up your shallots and garlic together. Set them aside, chop up your luncheon meat into small cubes and set those aside as well. Thereafter, chop up your chilli padi (remove 50% of the seeds if you don’t want your butt to explode the next day).

Step 3: When your pasta is cooked to al dente, scoop them into the bowl with some pasta water to keep them hydrated. Save some pasta water in another cup for later.

Step 4: Pour out the rest of the pasta water, rinse the pan a bit and heat up the pan until all the water has evaporated at LOW heat.

Step 5: Pour in olive oil into the pan, turn up the heat to medium and then throw in your chopped shallots and garlic. Stir fry them till golden brown before adding your luncheon meat cubes.

Step 6: When your luncheon meat turns golden brown, pour in your store bought pasta sauce (I used 3/4 of the 350g jar for 3 servings) and the cup of pasta water you saved earlier.

Step 7: Add chopped chilli and chilli flakes (optional) and let the sauce cook until it separates as shown.

Step 8: Add your pasta into the pan and stir it until your pasta is coated with sauce. Squeeze in a bit of lemon juice for extra tanginess and voila, you’re done - all in one pan!!!
