I have been asking my grandmother to create a cookbook with her recipes for as long as I can remember. This past Christmas she gifted me (and the rest of her grandchildren) this cutting board with her pumpkin bread recipe! And she titled it βMamaβs Babies Love Pumpkin Breadβ - if you know the shorteninβ bread song, youβll get it π₯°
I made this recipe yesterday, and it turned out perfect! π«ΆπΌ
The ingredients make two loaves as shown-cut ingredients in half for one loaf.
Wet ingredients:
2c pumpkin
4 eggs
1c oil
2/3c water
Dry ingredients:
3 1/3c flour
3c sugar
2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon nutmeg
6 teaspoons cinnamon
Preheat oven to 350. Mix dry ingredients in one bowl. Mix wet ingredients in a separate bowl.
Blend the two bowls together.
My grandmother uses the tin coffee cans to bake hers in-if using these fill 3 cans 2/3 of the way full and bake for one hour.
I used two 5x9 bread loaf pans filled 2/3 full and had to bake for 1 hr and 30 min.
I usually eat mine with cream cheese on top π
