Ok so I’m a Trader Joe’s girl and I love their soy chorizo! So good and super flavorful 😋

To make my work week easier, I prep a batch of the soy chorizo and a batch of a side of my choosing to go with it. I dress up my chorizo by adding any veggies on hand and to add bulk as well. This time I used red and green bell peppers and some white button mushrooms.

I make up my own chorizo bowl in the morning and add whatever toppings I want. This time I used Tabasco but other things I like to add are: cheese, sour cream, avocado, lettuce, pickles jalapeños, salsa, etc.

Ingredients:

- 1 package soy chorizo

- 1/2 red bell pepper, roughly chopped

- 1/2 green bell pepper, roughly chopped

- 1/2 C white button mushrooms, roughly chopped

- 1 package baby potatoes, sliced into 1-in. “chips”(see pic) and boiled

Recipe:

1. Boil the potatoes and strain

2. Chop up the veggies

3. Add all ingredients to the pan and sauté until the peppers and mushrooms are soft (No need to add oil as the chorizo already has enough)

4. Set aside enough for one serving (I usually get about 7 potato pieces and 3 scoops of chorizo) and top with your fave toppings! Enjoy!

5. Package up the rest of the chorizo and potatoes in separate containers for use later in the week (Cannot recommend the Rubbermaid Brilliance line enough for food storage!!)
