Chorizo Breakfast Tacos

In case you needed a reminder that iced coffee isn’t breakfast- here it is.😘 Give these delicious breakfast tacos a try and you’ll start your day off on the right foot!

~6 oz chorizo sausage

~2 tbsp olive oil

4 eggs

4 6” flour tortillas

1/2 cup fresh shaved cheddar cheese

Avocado

Preheat oven to 425°F. Heat 1 tbsp. olive oil in a skillet over medium heat. Add chorizo to skillet and cook 8-10 minutes or until cooked through, stirring occasionally. Remove chorizo from skillet and add eggs. Let fry about 2 minutes, flip and let fry 1 more minute. Place tortillas on a foil lined baking sheet. Evenly distribute the cheese and chorizo, and then add an egg to each. Fold each taco and lightly brush the outsides with a little bit of olive oil. Bake 5 minutes, flip and bake 5 more minutes. Mash avocado and add some to each taco. Enjoy!
