Greek Orzo pasta salad

This delicious and easy salad is one of my favorites!

Cook ahead and refrigerate before serving. Perfect side salad for salmon or chicken dishes.

Ingredients:

1 cup cooked orzo pasta (cool before adding to bowl)

1 diced tomatoes tomato

3 garlic cloves ( I grated mine for extra flavor)

small handful of fresh dill

1/2 cup feta crumbles

Half a peeling and diced Armenian cucumber

(* You can sub a regular cucumber)

Half a red onion- Diced

Once your orzo is cooled, add everything to a bowl and drizzle with olive oil, salt and pepper to salt.

The longer it refrigerates, the better the flavor!

Note: It also tastes amazing right after mixing too.
