Looking for a quick and nutritious snack? My go-to is homemade hummus with pita bread. It’s simple to prepare and perfect for the whole family. 🥙🥕
Ingredients:
- 1/2 cup dried chickpeas + 1 tbsp for garnish (or one 15oz can)
- 1 tsp baking soda (optional, to help skin the chickpeas)
- 2 tbsp tahini
- 3 garlic cloves, roasted
- 1/4 cup fresh lemon juice (about 1 large lemon - or more to taste)
- 1 tbsp extra virgin olive oil (plus more for garnish)
- 1/2 tsp cumin powder
- 3/4-1 tsp salt (depending on preference - start with 3/4 tsp)
- Ice cubes, 3-4, per consistency
- Paprika, sumac, olive oil and fresh minced parsley for garnish (optional)
Instructions:
1. Soak the dried chickpeas overnight in water (skip if using canned). Drain and rinse them.
2. Cook the chickpeas in a pot of water for about 1-2 hours until they are soft. Drain and let them cool. (skip if using canned)
3. Combine cooked chickpeas, tahini, roasted garlic, lemon juice, olive oil, cumin powder, and salt in a food processor. Blend until smooth, adding ice cubes or cold water as needed for desired consistency. 🍋🧄 Taste and adjust salt and lemon juice as needed.
4. Serve with pita bread and garnish with paprika and parsley if desired. Enjoy! 🌿
