CREAMY MASHED POTATOES
in large pot:
-cold water
-3 Ibs potatoes, equally diced
-1 tbsp salt
-boil until potatoes are fork tender
warm in medium saucepan:
-1/2 cup milk
-4 tbsp butter
-1/2 tsp salt
-pass potatoes through ricer into saucepan with cream
-mix & plate
optional: small butter pieces, garnish with chives
