Hey, girls! I hope the summer days are treating you well. Today, I’m sharing a fun and healthy recipe for a summer snack platter! This Mediterranean snack platter is perfect for hosting, and it's inspired by my Syrian roots. It's well-rounded, packed with protein, fiber, and lots of antioxidants!

To plan any snacking platter, use this simple formula to guide you, ensuring you have enough protein to keep you feeling full longer.

Step 1: Choose a summer fruit. I love using watermelon since it’s fresh and hydrating.

Step 2: Add your starch. From crackers to chips, choose any that you like! Bonus points if it’s whole grain for that added fiber. I went with whole wheat pita.

Step 3: Finish off with your protein. This is the most important step! I love adding cheese, and I always aim to include a plant-based source. Here, I used pan-fried halloumi cheese and lupini beans tossed with cumin and lemon juice.
