📒Notes: During the week I’m big on meal prepping. I typically aim for a quick dish that will last me throughout the work week. This is one of my go to meals! Here’s how to create this dish.
Ingredients:
2- 10 oz Cauliflower Rice
1 bag of Broccoli ( I used frozen)
Chicken (I used chicken breast-thicker cut)
Italian blend cheese (as much as you prefer)
Shredded Mozzarella (as much as you prefer)
2 tbs of butter
2 eggs (whisked)
Your choice of seasonings
Mine were: Onion Powder, Garlic Powder, Pepper
1. Set oven to 375; spray your rectangular pan with nonstick cooking spray and set aside.
2. Cook broccoli and cauliflower as instructed by the bag; set aside.
3. Slice the chicken breast down the middle to thin it out. Cut into square pieces and season.
4. Cook chicken in a skillet on stovetop, medium heat; only cook half way through since you’ll be baking the rest. Take off the stovetop and set aside. **or you can bake with everything and skip the stovetop portion.
5. Pour these ingredients into a bowl— whisked egg, melted butter, mozzarella cheese, chicken and add seasonings. Mix together.
6. Place into baking dish, top with Italian cheese, and bake for 50 minutes.
7. Serve and enjoy!
