๐Pros: One Dish Meal, Healthy, Easy
๐Notes: During the week Iโm big on meal prepping. I typically aim for a quick dish that will last me throughout the work week. This is one of my go to meals! Hereโs how to create this dish.
Ingredients:
2- 10 oz Cauliflower Rice
1 bag of Broccoli ( I used frozen)
Chicken (I used chicken breast-thicker cut)
Italian blend cheese (as much as you prefer)
Shredded Mozzarella (as much as you prefer)
2 tbs of butter
2 eggs (whisked)
Your choice of seasonings
Mine were: Onion Powder, Garlic Powder, Pepper
1. Set oven to 375; spray your rectangular pan with nonstick cooking spray and set aside.
2. Cook broccoli and cauliflower as instructed by the bag; set aside.
3. Slice the chicken breast down the middle to thin it out. Cut into square pieces and season.
4. Cook chicken in a skillet on stovetop, medium heat; only cook half way through since youโll be baking the rest. Take off the stovetop and set aside. **or you can bake with everything and skip the stovetop portion.
5. Pour these ingredients into a bowlโ whisked egg, melted butter, mozzarella cheese, chicken and add seasonings. Mix together.
6. Place into baking dish, top with Italian cheese, and bake for 50 minutes.
7. Serve and enjoy!
