We are walking into strawberry season & I am so excited (strawberries are my FAVORITE fruit!!)

INGREDIENTS:
5-7 fresh strawberries (sliced in small bite-sized pieces)
1/2 cup whole wheat flour (sub in almond flour to make these bars gluten-free)
1/2 cup almond flour
1 cup quick-cooking oats
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1 egg
1/4 cup maple syrup
1/4 cup coconut oil
1 tsp vanilla
INSTRUCTIONS:
Grease baking pan or line with wax paper. Use an 8x8 baking pan.
Whisk together wet ingredients. Stir in dry ingredients. Once well-combined, set aside 1/2 cup of mixture. Spread remaining batter in baking pan till you get an even layer. Spread on strawberry jelly (thin layer) & add on fresh strawberries. Add on remaining oat mixture.
Bake at 350 F for ~30 minutes (mine took 32 minutes) or till top looks slightly golden brown.
Cool for 5-10 minutes prior to slicing.
