✨ Easy Strawberry Blueberry Oatmeal Bars Recipe ✨

This oatmeal bar is a healthier fruit dessert made with fresh strawberries and blueberries and GF/DF/Organic crumb topping. This delicious recipe has become a favorite, because these treats are super easy to make!!

Ingredients:

β€’ 1 cup old-fashioned rolled oats gluten free

β€’ 3/4 cup organic GF flour (1:1 baking flour)

β€’ 1/3 cup light brown sugar

β€’ 1/4 teaspoon ground ginger

β€’ 1/4 teaspoon kosher salt

β€’ 6 tablespoons unsalted DF butter melted

β€’ 1 cup small-diced strawberries about 5 ounces, divided

β€’ 1 cup blueberries about 5 ounces, divided

β€’ 1 teaspoon cornstarch

β€’ 1 tablespoon freshly squeezed lemon juice

β€’ 1 tablespoon granulated sugar divided

Detailed Steps:

1. Place a rack in the center of your oven and preheat to 375 degrees F.

2. Line an 8Γ—8-inch baking pan with parchment paper.

3. In combine the oats, flour, brown sugar, ginger, and salt in a medium bowl. Next, pour in the melted butter and stir dry ingredients until it forms clumps and evenly moistened.

4. Set aside 1/2 cup of the crumble mixture.

5. Pour the rest of crumble mixture into an even layer in the bottom of the prepared pan and flatten.

6. Sprinkle half of the strawberries and blueberries over top of the crust. Next, sift the cornstarch over the top, sprinkle the lemon juice and 1/2 tablespoon of the granulated sugar. Sprinkle the reserved crumbs evenly over the top. Then, scatter on the remaining berries and remaining 1/2 tablespoon sugar. Note, you will have some fruit showing through and that is ok.

7. Place bars in the preheated oven for 30-35 minutes. The fruit should be bubbly and the crumb topping looks toasty golden.

8. Place the pan on a wire rack to cool.

Cut into 9 even bars and enjoy!
