i wanted to share the recipe for one of my favorite dishes, turkey noodle soup 🀀 it’s like chicken noodle soup, but even better!

Ingredients:

β€’ 2 tbsp. extra-virgin olive oil

β€’ 2 medium carrots, peeled and chopped

β€’ 2 stalks celery, sliced

β€’ 1 medium yellow onion, chopped

β€’ 1 leek, cleaned and chopped, whites and light green parts only

β€’ Kosher salt

β€’ Freshly ground black pepper

β€’ 3 cloves garlic, minced

β€’ 4 c. turkey stock (or low-sodium chicken broth)

β€’ 3 c. water

β€’ Small bunch thyme

β€’ Small bunch rosemary

β€’ 1 bay leaf

β€’ 1 tep. dried oregana

β€’ Pinch crushed red pepper flakes

β€’ 1 (12-oz.) package egg noodles

β€’ 3 c. cooked shredded turkey

Directions:

1) In a large pot over medium heat, heat oil. Add carrots, celery, onion, and leek and cook until soft for 5 minutes. Season with salt and pepper. Add garlic and cook until fragrant for 1 minute more.

2) Add broth, water, thyme, rosemary, bay leaf, oregano, and pinch red pepper flakes. Bring to a boil, then add egg noodles. Cover and cook until pasta is cooked through for 7 minutes. Discard thyme, rosemary, and bay leaf.

3) Add turkey and simmer until warmed through for 5 minutes. Season with more salt and pepper.
