A super easy, healthy weeknight option — gnocchi soup made with cauliflower gnocchi from Trader Joe’s!
Ingredients:
— 1/2 of a large white onion, diced
— 2-3 cloves of garlic, minced
— 1 package of chicken sausage
— 1 tsp each of oregano, garlic powder, and 21 seasoning salute
— red chili flakes to your spice preference
— 2 14 oz. Cans of San Marzano tomatoes
— 2 cartons of chicken bone broth
— 1 package of cauliflower gnocchi
— 1 cup of coconut milk
— Optional topping, ricotta cheese and chili crisp
How-to:
1. Add garlic, onion, and a generous splash of olive oil to a large pot over medium heat. Cook until until fragrant and the onions become translucent.
2. Add the spices and chicken sausage, and stir to combine.
3. Add the tomatoes, and crush slightly as you mix them with the rest of the ingredients.
4. Add the chicken broth, and let it continue to heat until it reaches a low boil.
5. Add the cauliflower gnocchi and cook for 3 minutes.
6. Reduce heat and add coconut milk. Add salt and pepper to taste.
7. Top with ricotta & chili crisp and enjoy!
