What’s better than grilled cheese?? Grilled cheese croutons! Aka grilled cheese cut up into bite-sized pieces in the perfect size to scoop up with tomato soup. This is a fun twist on a classic recipe and makes for a perfect, cozy fall dinner. I made this over the weekend, and had the tomato soup for the rest of the week to top off with a fresh grilled cheese.

Ingredients:

— 2 28 oz. cans crushed or diced tomatoes

— 1 can coconut milk

— 1 1/2 cups chicken broth

— 1 white onion

— 2-3 cloves garlic

— 1 tbs sugar

— 3 tbs parmesan cheese

— handful of fresh basil

— cheddar, mozzarella, sourdough & butter for grilled cheese

How-to:

1. Dice your garlic and onion, and sauté with olive oil, salt, pepper, and red pepper flakes until fragrant and softened.

2. Add in tomatoes, chicken broth, parmesan cheese and sugar and continue to let simmer for 15-20 minutes.

3. Add in coconut milk and basil, and heat for 5 more minutes. Remove from heat and blend until smooth.

4. Prep your grilled cheese, and serve overtop your soup with extra olive oil, parmesan, and basil.
