2 cups all-purpose flour

2 teaspoons baking soda

1 1/2 teaspoons ground cinnamon

1 1/4 cups vegetable oil

1 cup granulated sugar

1 cup brown sugar

4 large eggs

3 cups grated carrots

1 cup chopped pecans (optional)

1/2 cup raisins (optional)

For the Frosting:

8 ounces cream cheese, softened

1/3 cup heavy cream

1 1/4 cups powdered sugar

Preheat Oven: Set to 350°F (175°C). Grease and line two 9-inch round cake pans.

Mix Dry Ingredients: In a bowl, whisk flour, baking soda, salt, and cinnamon.

Mix Wet Ingredients: In another bowl, combine oil, sugars, vanilla, and eggs. Stir in carrots, pecans, and raisins.

Combine: Fold dry ingredients into wet until just combined. Divide batter between pans.
