This recipe is gluten, dairy, and refined-sugars free, and it tastes just like a pumpkin muffin! This is a great way to satisfy your sweet tooth in the morning with a sweeter breakfast, but without giving up some much needed protein in the morning (eggs, oats, and nut milk). It’s also a great way to spice up your average oats if you have some extra time in your morning ☀️
Recipe:
1/4 cup pumpkin purée
2 eggs
1/2 cup cashew milk or other nut milk
1 cup oats
1 tbsp maple syrup
1/2 tsp vanilla
1/2 tsp pumpkin pie spice
1/2 tsp baking soda
pinch of salt
chocolate chips
Instructions:
- Preheat oven to 350 F
- Combine and blend all ingredients, except for the chocolate chips
- Pour into oven-safe container
- Add chocolate chips on top
- Bake for 30 minutes at 350 F
