this one is for the brothers and sisters who hate washing dishes as much as i do 😩 one pot recipes are a lifesaver! if you love garlic and savoury broths as well, then look no further 👀

here’s my simple 15 min one pot creamy garlic prawns recipe! think prawns in a buttery broth… not the most healthy but i think this one is worth it LOL

here’s what you’ll need: (serves one)

• 5g butter

• 1.5 tsp olive oil

• 1 clove garlic, peeled and crushed

• 80ml stock of choice

• 25ml extra light coconut milk

• 1 tsp dijon mustard

• 110 g raw king prawns, deveined

• salt and pepper

• 100g cooked white rice

• small bunch parsley, chopped

• (optional, but recommend: 1/2 broccoli and 1/2 red pepper, chopped and blanched)

method:

1️⃣ Heat the oil and butter in a frying pan over a

medium heat, add the garlic and cook for a

few minutes. Pour in the stock and whisk

together.

2️⃣ Lower the heat then stir in the coconut milk

and mustard. Add the prawns and cook for a

few minutes until the prawns are cooked

through then season to taste. If you are adding veg, throw in the blanched broccoli and red pepper at this time.

3️⃣ Serve with a warm bowl of rice, top with the parsley and serve.

there you have it! a quick and easy warm bowl of happinesses. can you make this healthier? for sure, by removing the butter and oil, but garlic and butter = heaven and this is one of those dishes i’m willing to indulge in 🤣
