This is a reaaaally easy recipe if you have all the ingredients at home. There is no technique required as long as you know how to boil water and cut stuff.

Ingredients:

• Kelp broth powder (I always stock up mine from DDDK when there’s a sale.) or dashi.

• Dried kelp bits (I also bought this from DDDK.)

• Egg tofu or normal tofu

• soya sauce

Steps:

1) Boil 1 litre of water (This is for 3 pax, so you can adjust accordingly.)

2) Soak dried kelp bits in water to rehydrate them.

3) When the water is boiled, pour the kelp broth powder in and stir.

4) Put rehydrated kelp and tofu in. Use a ladle to slowly put in the tofu so that the hot water will not splash on you.

5) Add soya sauce to taste.

And it’s done! You can pair this soup with Japanese rice or udon. I added on some air fried frozen ebi for my girl.
