Hey Lemons, happy Thursday
For you we have put together a dinner or lunch idea any of you will enjoy!
This is a healthier take on pulled pork sandwiches but we use Hawaiian buns for ours.
For our sides we did our baked beans (go to previous meals for a picture)
We also made our Funeral Potatoes
And jalapeño kettle cooked chips (you can use any kind you like)
This meal is a must! Try it!
Pulled chicken:
~2 packs of boneless, skinless thighs
~butter
~honey
~brown sugar
~onion
~garlic
~lawrys seasoning salt (tiny pinch)
~Kenders barbecue blend
~Kenders Hickory Brown Sugar
~barbecue sauce
The Process:
~season chicken thighs with all ingredients
~put charcoal on one side of the grill, cooking chicken on opposite side (indirect heat)
~sear chicken
~take off and move to the other side of grill and cook until done.
~put chicken into pan (refer to picture)
Adding honey, butter, barbecue sauce, brown sugar, and add a little bit more of the rub and a whole onion sliced.
~cover with aluminum foil and place back on the grill til everything melts and chicken is tender enough to pull apart.
~remove onions if you prefer.
Baked beans:
~one or two large cans of your favorite baked beans
~mustard
~ketchup
~brown sugar
~ Worcestershire sauce
~barbecue sauce we love famous Dave’s brand
The Process:
~mix all ingredients into pot
~cook until done
Funeral Potatoes:
~one bag of shredded potatoes of choice
~sour cream
~one box of cream cheese
~cheddar shredded cheese
~butter
~cornflakes
~2 small cans of cream of chicken soup
The Process:
~mix all ingredients together in a large pan making sure you mix in everything evenly
~melt down butter and crunch cornflakes into bowl, then layer on top of potato’s.
~bake at 350 until golden brown (refer to picture)
