These coffee cake muffins came out so cute and were a great breakfast to take on the go.
The recipe is from Chels likes cute food on Instagram! This was my first time making coffee cake without sour cream and I do have to say I prefer it with. They where a tiny bit dry in my opinion.
Optional! I added a cinnamon swirl in mine to really get the coffee cake feel.
2 tablespoons melted butter
2 tablespoons brown sugar
1 teaspoon cinnamon
You can always add more brown sugar if the mixture is too thin. Dollop a teaspoon on top of the first scoop of cupcake batter and use a toothpick to swirl around. Top with the rest of the cupcake batter.
I also added a maple glaze on top of my muffins that I had left over from an earlier bake.
2 Tablespoons maple syrup
1 teaspoon vanilla extract
¾ cup of powdered sugar
