I have been focusing on working with more flavors. Here are this month's top cookie picks.
Cookie 1: Brown butter oatmeal cookies with chai icing
These cookies were so good, they were gone in just two days. This is Broma Bakery's recipe! I ended up needing about two extra tablespoons of flour and oats because my dough was too sticky. I recommend letting it rest at room temperature for about 15 minutes before placing it in the oven.
Recipe for the chai icing:
1 ½ cups powdered sugar
Splash of vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
¼ teaspoon ground ginger
½ teaspoon ground cardamom
1-3 tablespoons milk (depending on how you'd like the consistency of your icing)
Cookie 2: Lemon Blueberry crumble cookies
This is Broma Bakery's recipe. (The original recipe does not call for any lemon.) I added a tablespoon of lemon zest to my sugar and massaged it in before adding butter. I find it helps blueberries taste better.
Cookie 3: Oatmeal chocolate chip cookies with peanut butter drizzle
This is Sally's Baking Recipe! I wanted to incorporate the gooey texture of peanut butter into a cookie without it just being the base flavor. You can never go wrong with dark chocolate and peanut butter together.
Recipe for peanut butter drizzle:
¼ cup peanut butter (no stir, no additives)
1 tablespoon coconut oil
2-3 tablespoons of maple syrup
You want to heat this on low and stir just until it's all combined. You should have a slightly thinner consistency. (about 3-4 minutes)
Cookie 4: Dark chocolate peanut butter cookie cups
This is Tasting Thyme's recipe! I kept this recipe exactly the same and they were amazing. I do wish I didn't push down as much on my cookies because it got messy lol.
