Ingredients:
1 tablespoon olive oil
1 cup chopped onion
2 cloves garlic, minced
2 cups shredded cooked chicken
15 ounce can black beans, rinsed and drained
4 ounce can diced green chiles
chili powder
ground cumin
dried oregano
salt
12 ounce can red enchilada sauce,
shredded cheese, (about 3 cups) cheddar, Monterey jack, Mexican cheese blend, or a combination
flour tortillas
for serving: fresh cilantro, chopped green or red onion, sour cream, etc
preheat oven to 350°. make the enchilada filling in a skillet. once warm, spread 1/2 cup of enchilada sauce over the bottom of a 13x9-inch baking dish. assemble each enchilada, take one of the tortillas and fill with the enchilada filling. roll tightly and place in baking dish and repeat. once done, pour remainder of enchilada sauce and top with cheese. bake for 20-25 mins!
