This Beef stew with daikon and carrots is a popular classic Hong Kong dish. It is comforting, flavorful, and super delicious! Making it in the Instant Pot saves so much time! The sauce is packed with umami and is perfect to eat with rice or noodles. I hope you try it out!

INGREDIENTS

1 lb beef stew meat

1 lb, daikon, cut in large chunks

2 large carrots, cut in large chunks

1 cup chicken broth

3 tbsp chu hou paste

2 tsp oyster sauce

1 tbsp dark soy sauce

1 tbsp soy sauce

1 tbsp Shaoxing wine

2 tsp sugar

1 shallot, chopped

6 garlic cloves, smashed

3 star anise

4 ginger slices

3 scallions, separate green and white parts

4 tbsp water

3 tbsp cornstarch

Salt, to taste

INSTRUCTIONS

Step 1: Heat up Instant Pot using Sauté function. Wait until it says HOT. Pat dry the beef. Drizzle the inner pot with 1 tbsp olive oil. Then, brown 1 side of the beef.

Step 2: Brown the other side of beef. Add crushed garlic cloves, sliced ginger, chopped shallot, and white part of scallions in Instant Pot. Saute until fragrant about 2 minutes.

Step 3: Pour in 1 tbsp Shaoxing wine and completely deglaze the bottom of the pot.

Step 4: Add 3 tbsp chu hou paste, 1 tbsp regular soy sauce, 1 tbsp dark soy sauce, 2 tsp oyster sauce, 3 star anises, 2 tsp sugar in Instant Pot. Give it a quick mix so all the ingredients are infused with the paste.

Step 5: Add in daikon chunks, carrot chunks, 1 cup chicken broth, and a pinch of salt. Give it another quick mix. Ensure all the beef is partially submerged into the sauce.

Step 6: Pressure Cook at High Pressure for 25 minutes, then 15 minutes Natural Release.

Step 7: Bring the beef stew sauce to a simmer with the "Saute" button. In a small mixing bowl, mix cornstarch with water, then mix it in one third at a time until desired thickness.

Step 8: Add beef, daikon, and carrots to a serving bowl. Drizzle with the yummy flavorsome chu hou sauce and optional sliced scallion greens. Enjoy!

My husband and I really enjoyed this stew. It is so good with the melt-in-your-mouth carrots and daikon. The beef and the sauce have so much flavor! I couldn't stop eating it. I would definitely make this recipe again!
