Ingredients:
• 2 lbs beef stew meat, cubed
• 1 large onion, diced
• 3 cloves garlic, minced
• 4 large carrots, sliced
• 4 medium potatoes, cubed
• 3 cups beef broth
• 2 tbsp tomato paste
• 2 tbsp Worcestershire sauce
• 1 tsp thyme
• 1 tsp rosemary
• 1 tsp paprika
• Salt and pepper to taste
• 2 tbsp olive oil
• 2 tbsp cornstarch mixed with 2 tbsp water (for thickening)
Instructions:
1. Sauté: Set your Instant Pot to the sauté function. Add olive oil and brown the beef stew meat in batches. Remove and set aside.
2. Cook Aromatics: Add diced onions and minced garlic to the pot. Sauté until fragrant and onions are translucent.
3. Add Ingredients: Return the beef to the pot. Add carrots, potatoes, beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper.
4. Pressure Cook: Close the lid and set the valve to the sealing position. Select the “Pressure Cook” or “Manual” setting and cook on high pressure for 35 minutes.
5. Natural Release: Allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.
6. Thicken: Set the Instant Pot to sauté again. Stir in the cornstarch mixture and let it cook for a few minutes until the stew thickens.
7. Serve: Enjoy your delicious, hearty beef stew! Garnish with fresh parsley if desired.

• For a richer flavor, add a splash of red wine when sautéing the beef.
