Ingredients:
2 cups chopped cabbage
2 cups chopped purple cabbage
1 cup chopped carrot
1 cup chopped red bell pepper
1 cup steamed edamame
1 cup chopped peanuts
3 cups chopped cooked chicken (I also added cooked shrimp)
Add ingredients together and mix!
Thai Peanut Dressing:
3 tbsp peanut butter
2 tbsp honey
2 tbsp soy sauce
2 tbsp water
1 tbsp rice vinegar
1 tbsp sesame oil
2 tsp lime juice
2 tsp chili garlic sauce
2 tsp minced garlic or 1 tsp garlic powder
2 tsp minced ginger
Add ingredients together and mix well!
Add salad mix to lettuce and top with green onions or cilantro and peanut dressing and peanuts.
