Ingredients
1 cup cottage cheese
1 cup self-rising flour
Optional: 1/4 cup baking soda (for boiling water)
Optional: Olive oil or egg wash for brushing
Optional: Everything but bagel seasoning for sprinkling
Instructions
Preheat your oven to 375°F (190°C).
In a bowl, combine the cottage cheese and self-rising flour until a dough forms. If desired, add olive oil.
Lightly knead the dough on a floured surface until smooth.
Divide the dough into four equal portions and shape each into a bagel, creating a hole in the center.
In a large pot, bring water to a boil and stir in the baking soda.
Carefully drop the bagels into the boiling water, cooking for about 30 seconds on each side, then remove with a slotted spoon.
Arrange the boiled bagels on a parchment-lined baking sheet.
Brush with olive oil or egg wash, and sprinkle with everything but bagel seasoning if desired.
Bake for 20-25 minutes, or until golden brown.
