This recipe combines my two current obsessions: one pot orzo recipes and caramelized onions.
Ingredients:
2 tbsp olive oil
1 yellow onion, sliced thin
1 tsp fresh thyme, chopped
1 tbsp balsamic vinegar
1 cup orzo
3 cups vegetable broth
1/4 cup heavy cream
1/2 cup gruyere cheese, shredded
salt and pepper to taste
Instructions:
Heat oil in a large sauté pan over medium/low. Add onion, salt, and pepper and cook, stirring occasionally, until golden brown and caramelized, about 30 minutes.
Stir in thyme and balsamic vinegar, using a wooden spoon to scrape up any brown bits at the bottom of the pan. Add orzo and toast for a couple of minutes. Stir in broth and simmer until most of the liquid is absorbed, and orzo is cooked through. Stir in heavy cream and gradually stir in gruyere until melted. Season to taste and serve.
