For The Chicken
110g chicken, minced
1 tbsp minced fresh ginger
1 tbsp water
1 tsp Shaoxing wine
1 tsp light soy sauce
½ tsp cornstarch
¼ tsp sugar
For The Steamed Eggs
3 large eggs
¼ tsp salt
Water (2 x volume of egg)
For The Rest Of The Dish
2 shitake mushrooms, finely chopped
½ tsp dark soy sauce
2 spring onions, chopped
some water

Steam high: turn the knob to 17, and set for 15 minutes
Water level: 2 (max)
Food tray position: Upper
Instructions
1. Season the chicken: In a bowl, combine minced chicken, ginger, water, Shaoxing wine, light soy sauce, cornstarch, and sugar.
2. Steam the eggs: Crack the eggs into a separate bowl, add salt, and gently beat them until the yolks and whites are well combined. Add water to the mixture. The perfect water-to-egg ratio is 2 to 1. You can use the eggshells to easily measure the water. Steam the eggs using Sharp Healsio instructions, or alternatively, steam over boiling water for 10 minutes.
3. Cook the chicken and serve: Heat oil in a pan and stir-fry the chicken over medium-high heat for 2 to 3 minutes, breaking the chicken into small crumbles until it begins to crisp. Add shiitake mushrooms and cook for another 3 minutes, until the mushrooms are lightly caramelized. Add dark soy sauce, some water and spring onions (white part) and cook for 30 seconds. Top the steamed eggs with the chicken and mushroom mixture and serve!
