if you end up with overcooked, rubbery eggs every time you attempt a steamed egg dish, then this recipe is for you! this is a fail proof recipe that guarantees perfectly silky and delicious steamed eggs every single time.

what you’ll need:

2 eggs beaten

water - 1.5x the volume of beaten eggs (i added in about 150 ml of water)

pinch of salt

i tbsp soy sauce

1 tsp sesame oil

green onion

directions:

crack the eggs into a measuring cup and beat the eggs. Pour water into the beaten eggs, add salt and mix well.

through a sieve, pour the egg mixture into a bowl suitable for steaming. Cover the bowl with cling wrap and steam the egg for 13-14 mins. depending on the depth of the bowl you use, you may need slightly lesser or more time to steam the eggs till they are fully cooked (the more shallow your dish is, the lesser time needed for eggs to fully cook)

Once the egg is cooked, take it off the heat and make diagonal cuts so that the sauce can penetrate through. Add the soy sauce and sesame oil on top the steamed egg and garnish with some green onions.
