For the Cheesecake Filling:
• 4 oz cream cheese, softened
• 1/4 cup powdered sugar
• 1/2 teaspoon vanilla extract
For the Pumpkin Spice Sugar Coating:
• 1/4 cup granulated sugar
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon pumpkin pie spice
Easy Steps:
1. Make the Cheesecake Filling: Mix softened cream cheese, powdered sugar, and vanilla until smooth. Scoop into small balls and freeze for 30 minutes.
2. Mix the Dough: Beat butter, granulated sugar, and brown sugar until fluffy. Add pumpkin, egg, and vanilla. In a separate bowl, whisk flour, baking powder, baking soda, salt, and spices. Mix dry ingredients into the wet mixture.
