I love making these each fall! They are beyond delicious and super moist! Have you tried these before?

Muffins

- 1 3/4 cup flour

- 1 tbsp pumpkin pie spice

- 1 tsp baking soda

- 15oz. (1 can) pumpkin puree

- 1 cup sugar

- 1/2 cup brown sugar

- 2 large eggs

- 1/2 cup vegetable oil

- 1 tbsp vanilla

Cream Cheese Swirl

- 8oz cream cheese (softened)

- 1/4 cup sugar

- 1 egg yolk

- 2 tsp vanilla

Directions

1. Preheat oven to 350 and line/spray a muffin pan.

2. In a medium bowl, whisk flour, pumpkin pie spice, salt, and baking soda.

3. In a large bowl, whisk together puree, sugar, and brown sugar. Beat in eggs, oil, and vanilla.

4. Slowly whisk in flour mixture until there are no lumps.

5. Fill muffin pan with batter. About 3/4 full

6. Make the cream cheese swirl: Beat the softened cream cheese, sugar, egg yolk, and vanilla until combined.

7. Top each muffin with 1 tbsp of the cream cheese mixture and swirl with a toothpick.

8. Bake for 18-20 minutes until toothpick inserted comes out clean.
