Yummy Stuffed Peppers 🫑

I love when a dish is super colorful! 🫑 Here’s tonight’s dinner inspired by this Modern Proper recipe: https://themodernproper.com/vegetarian-stuffed-peppers!

What I changed:

-I used brown rice instead of white rice for a little extra fiber.

-I add ground chicken so the dish has more protein. I’ve made it with and without meat in the past and it’s delicious if kept vegetarian too!

-You can use any brand of Pepper Jack cheese, but I prefer the Cabot brand for its naturally lactose-free benefits.

-I was unfortunately out of canned corn when making this tonight. Otherwise, I would’ve added it!
