Honey Balsamic Roasted Carrots

Carrots are by far my favorite roasted veggie & these honey balsamic carrots is SO GOOD! Fresh carrots, garlic & thyme are tossed in a rich honey balsamic sauce then roasted until tender & topped with crumbled goat cheese! (The goat cheese is optional but I just love the creaminess/tang it adds.😉) Plus the crispy bits on the carrots after they caramelized in the oven is *chef’s kiss*.😘 We love serving them for an easy fall side dish & they’re sweet & savory flavors pair perfect with so many entrees.

Festive enough for the holidays yet easy enough for a weeknight dinner!
